THE 2018 COMPETITION
Australia’s premier baking industry teams competition where the finest young apprentices and newly qualified baker pastry chefs compete for the honour of representing their states at the Bake Skills Nationals.
At the request of both Industry & sponsors, this year's Bake Skills Nationals team competition is being replaced with two new individual championships...
The Bake Skills Australia Champion Pastry Chef for 2018
(to be held on September 10 & 11)
and The Bake Skills Australia Champion Baker for 2018
(to be held on Sept 12 & 13)
Both championships will be held in the Moffat equipped, live bakery at Fine Foods in Melbourne this coming September, with up to there will be 5 finalists competing in each category.
A challenging production schedule awaits both groups of finalists when they reach Fine Foods with the Pastry Chefs being challenged to produce a range of Choux & 3/4 puff pastry products - including profiteroles, modern eclairs, a Gateau Saint Honore, Vol au vents, Mille feuille & palmers on Day 1.
Competitor's creative & decorative skills will again be challenged with a diverse range of sweet tarts; gourmet pies; baked cheesecakes; a decorative special occasion cake and the Callebaut chocolate innovation entremets to be produced, decorated and presented to for final judging at 3.00pm on Day 2. awaiting them.
The Bakers too, will have their challenges with a production schedule created to test both their basic & artisan abilities. These include a range of Rye Sour Doughs - both plain & flavoured; Ciabattas & Turkish breads; a white sour dough; 16 X freestyle croissants; baguettes; brioche; 4 strand plaits; Winston knots & a creative bread show piece.
In addition, baking competitors will also undertake a Winston knot Master class with Lesaffre's Brad Hewitt to fine tune their plaiting skills during their orientation day - we look forward to some spectacular bread displays on the final day of the show!
A fabulous range of rewards is available for both the winners...and both the runner's up, including -
Runners Up (both pastry chef & baker) - a 3 day/ 2-night trip to attend the ASB National Conference & Chairman's black-tie dinner
Winners - In addition to wearing the coveted Bake Skills Australia green jacket, the Champion pastry Chef will attend a special training course at Kirsten Tibball's Savour Chocolate & Patisserie School & the Champion Baker will undertake a special "hands on" training programme with Australian Team member, Dean Tilden in Newcastle.
